Cold Summer Oatmeal


         











Ingredients:
2 cups rolled oats (not instant or quick cooking)
2 cups unsweetened soymilk,coconut milk or almond milk
1 teaspoon lemon  or orange zest
1/2 teaspoon vanilla extract
1/4 cup chopped pecans, walnuts or almonds
Fresh fruit- bananas, peaches, blueberries, strawberries
2 tablespoons agave nectar (optional)


Method:
Combine oats, non-dairy milk, zest and vanilla in a bowl, cover and refrigerate overnight. The next morning, scoop oatmeal into bowls and top with pecans, peaches and a drizzle of agave nectar.



Black Bean Burgers and Sweet Potatoe Fries

Ingredients:
1 can black beans
olive oil
1 small diced onion
2 cloves garlic
1/2 C panko bread crumbs
1/2 C corn meal
1/2 C water
1 TB chili powder
Diced jalepenos
salt, pepper
1 carrot, grated

Method:
Add oil to fry pan and throw in garlic and onion, soften
Toss everything else into a bowl, add garlic and onion  and get busy squishing with your hands and fingers. Form into patties and fry. Top with salsa, avacado, lettuce, tomato

To make fries, wash, peel (optional) and cut into fry shapes, add to cookie sheet, drizzle with a little olive oil and sprinkle with salt abd pepper. You can add cajun seasoning, garlic powder or whatever you want! Bake for about 20 min. @450.

We like to whip up a quick aioli sauce by combining veganaise, garlic and lemon juice. This is a nice dip for the fries.
